Why stainless steel changes everything
Traditional mortars — made of stone (granite, marble), wood, ceramic, or cast iron — each have their practical limitations: stone is porous and absorbs the flavors of previous spices (impossible to grind a chili then rosemary without cross-contamination), wood permanently soaks up essential oils, ceramic is fragile to shocks, and cast iron rusts on contact with moisture. Stainless steel solves all these problems in a single material.
Stainless steel is perfectly smooth and non-porous, allowing you to grind different spices successively without the risk of aromatic mixing. It is hygienic (used in professional kitchens and medical settings for this reason), corrosion-resistant even on contact with acidic spices like dried lemon or sumac, and easy to clean under running water with a simple sponge wipe. Grinding technique: For efficient grinding, fill the mortar to a maximum of 1/3 of its capacity only—beyond that, the spices will jump out instead of being crushed. Start with a circular pressing motion (rather than a vertical pounding), applying constant pressure from the pestle against the bottom of the mortar. This technique releases aromas better than repeated pounding. For very hard spices (black pepper, green cardamom), start by gently fracturing them with a few vertical strokes, then switch to a circular motion to refine. For a spice blend (garam masala, for example), grind the spices one by one, then mix at the end to better control the fineness of each. The mortar must be dry—never use water, the stainless steel mortar is designed for dry spices.
Maintenance: Very simple cleaning thanks to stainless steel. After each use, wipe the mortar and pestle with a dry cloth or paper towel to remove spice residues. For a thorough cleaning, wash in warm soapy water with a soft sponge or soft-bristled brush, rinse and dry immediately. Dishwasher safe but hand washing better preserves the brushed finish. For very aromatic spices that leave a trace (turmeric, smoked paprika), a little coarse salt + lemon juice rubbed with a sponge will remove any residual odor. Store away from humidity.
Usage precautions: Mortar designed for dry spices only. Do not use to grind wet foods (fresh garlic paste, fresh ginger, pesto basil) which require a suitable traditional stone mortar. Do not use for very hard foods such as whole pits or bones. Keep out of reach of children—the pestle is heavy and poses a risk of falling.
